Butcher Lyndon Boot, who is promoting the concoction at his market stall in Hyde, Greater Manchester, smiled as he told me what had gone into the beige-coloured mixture.
Honeycomb tripe – the most popular form of the cow’s intestine – blended with salt, vinegar, black pepper, onion and water. I took my first tentative sip of the mixture which had a texture like thick potato soup, if I’m being kind, or beige sludge if I’m not. I was nearly sick. I pulled myself together and took my next drink, a confident mouthful. I could taste the onion, the pepper but not much else. It was the foreign texture making me feel nauseous. Another taste and again I felt I was about to heave.
